Slow Cooker Carrot & Lentil Soup

Slow cooker carrot & lentil soup is a variation of this recipe: Slow Cooker Lentil Soup

The original has ham, a bunch of herbs that I never seem to have around and way less carrots, but other than that it’s pretty much the same. You can see our measurements for the vegetarian version below (the main difference being a LOAD of carrots), or try out the original if you eat meat! Feeds 4 – 6.


  • 1 onion
  • 190g green lentils
  • 900ml vegetable stock
  • 250ml water
  • 300-500g carrots
  • 4tbsp tomato puree
  • Good pinch of black pepper

The super simple method:

  1. Put dry ingredients in slow cooker
  2. Make hot stock and put in cooker
  3. Cook on low for around 11hrs, or on high for 5-ish hours
